This is my favourite falafel recipe. It is super easy and super delicious.To make them extra healthy these falafels are baked instead of fried.
This recipe makes 8 medium sized falafels.

Ingredients:
- 1 14-oz can of chickpeas
- 1 small onion
- 1 clove of garlic
- 1 bunch of coriander
- 1 tablespoon of falafel spice mix or:
- 2 teaspoons of cumin
- 1 teaspoon of ground coriander
- 1 small red chilli or 1/4 teaspoon red chilli powder (optional)
- add salt to taste
Instructions:
- Preheat the oven at 200 °c
- Drain and rinse the chickpeas.
- Put chickpeas along with with all other ingredients (onion, garlic, coriander, spices, and optionally a chilli) into the food processor.
- Use an ice cream scoop or your hands to shape the falafels. Place them on a non-stick or parchment lined baking sheet.
- Place them into the oven and bake for 15 minutes or until they are golden brown and they start to crisp at the edges.



Serve with some hummus and pita bread.
